CREPES
1 1/2 cups milk
4 eggs
1 cup all-purpose flour
2 teaspoons sugar
1/4 teaspoon salt
8 teaspoons butter
Whisk milk and eggs. Combine the flour, sugar and salt; add to milk mixture and mix well. Melt 1 teaspoon butter in frying pan or skillet over medium heat; pour 2 tablespoons batter into center of pan. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack or plate. Repeat process until batter is gone.

I love crepes. When I was growing up, my mom made a thing similar to crepes, she calls them palachinkis. I liked to put a little butter on mine and sprinkle cinnamon sugar on it before I rolled it up. Also yummy with cottage cheese!
